"I got this Recipe from "Fed up" on the Veria channel, by Andrea Beaman. It's very easy and actually really tasty! I love it. So healthy too, tons of fiber, and truly a healthy dish. Very filling, I eat it for lunch sometimes by itself. WW friendly.. I use organic ingredients The only difference is, I don;t use meat in it when I make it, she used cooked chopped chicken. I prefer it without, as I usaually pair it with a WW spiced tilapia recipe I found here on Zaar, and goat cheese and scallion stuffed cherry tomatoes, asparagus, or some other veggie.. Yum"

  • 1 (15 ounce) can black beans
  • 3 cups quinoa, cooked (about 1 cup uncooked makes 3 cups cooked!)
  • 1 red pepper, chopped
  • 1 red onion, minced
  • 14 cup cilantro
  • 3 tablespoons lime juice
  • 2 tablespoons red wine vinegar
  • 1 tablespoon agave nectar (or some other natural sweetner)
  • 13 cup olive oil
  • 1 teaspoon cumin
  • salt & pepper

directions

  • Cook Quinoa as directed on package (I use Bob's red mill. 1 3/4 cup water and 1 cup dry Quinoa).
  • While Quinoa is cooking, place Cilantro, lime juice, red wine vinegar, agave, olive oil, salt and pepper in a blender or food processor and pulse.
  • Toss finished Quinoa in a large bowl with black beans, red pepper, and onion.
  • Pour cilantro lime vinaigrette over Quinoa salad and let marinate for atleast 30-45 minutes.
  • (Note: I added everything up myself using calorie king- and it can out to be 260cal, 11g fat, 5g fiber per serving).

  1. I would like to make this recipe since we love Quinoa. Where does the cumin go. I guess it would go with the vinaigrette. I feel kinda stupid asking. Thank you. I did save it

  1. I am making this right now - July 4, 2013 so haven't tasted yet but it sure looks fab! Question:<br/>To what do you add the cumin- to vinaigrette or to quinoa mix? It's not mentioned in recipe at all. Thanks for any help!

  2. I love this recipe. Better than the Costco premade quinoa salad. I typically add cucumber and cherry tomatoes (cut in half) as well as the other veggies. You could add whatever veggies you want and it would still be great. This salad holds in the fridge for several days. You could even use the vinaigrette on regular salads too. Thanks for posting!

  3. We love this! I have made it several times and my family eats up every time.. I added cut up chicken one night to make it our main dish. We love the viniagrette and I always double the recipe to have it for my regular salad. I ran out of quinoa one time and subbed brown rice. It was almost as good as the quinoa. Thanks for sharing this recipe!

  5. Wonderful. Made the recipe as printed and it turned out great. The different colors from the beans, peppers and cilantro made this dish pop on the table. Moving this recipe to the top of my favorites because I am certain you could add any additional veggies you have on hand. Already decided the next time I make this I am serving with grilled shrimp.   1. Excellent salad! I made this a few days ago as a side dish for a salmon dinner and really enjoyed it. I discovered as I was putting it together that I had pinto beans but no black beans so used those instead. I used regular quinoa from Trader Joe's and turbinado sugar as my natural sweetener. Next time I will back off on the onion by half, or maybe even cut up some scallions instead. I think the best part is the "dressing" on the quinoa. Thanks, dr_kaley, I haven't found that many great quinoa recipes, but this is one!

I am in the process of trying to convert all of my recipes from caned/boxed stuff into made from scratch recipes. And this site is my STAPLE for doing so! Im just trying to make everything more healthy for my family and I. We eat about 95% organic food. So the problem with buying even canned organic foods, is that they still tend to contain somethings like "yeast extract" which is just another form of MSG. Also, I would like to add that I am not a doctor (alot of people see the dr_kaley and think so), but I AM currently working toward my Master Herbalist degree. I do alot with herbs and the only medicines we use, are herbal. I even make alot of my own herbal medicines.
